However it does make a contribution even if you don't like it, sometimes that contribution can be pretty sweet and allow the other flavours to shine.
I also must admitt as much as I have my preference the chef also knows the quality of ingredients better than me so have to trust him to some degree. The restaurant wouldn't have upset the old chefs mum for nothing - right?
